Instructions:
1. Preheat the Oven:
- Preheat your oven to 375°F (190°C).
2. Prepare the Crust:
- Place cauliflower rice in a microwave-safe bowl, cover with a damp paper towel, and microwave for 5 minutes. Let it cool slightly.
- In a mixing bowl, combine the cauliflower rice, egg, grated cheddar cheese, salt, and pepper. Mix well.
- Press the cauliflower mixture into the bottom and up the sides of a pie dish to form the crust.
3. Par-Bake the Crust:

- In a bowl, whisk together the eggs, cottage cheese, grated cheddar cheese, salt, and pepper.
- Scatter cherry tomatoes, chopped spinach, diced red bell pepper, and chopped red onion over the par-baked crust.

5. Bake the Quiche:
- Bake the quiche in the preheated oven for 25-30 minutes or until the center is set and the top is golden brown.
6. Check for Doneness:
- Check for doneness by inserting a toothpick into the center of the quiche; it should come out clean.
7. Cool and Garnish:
- Allow the quiche to cool for a few minutes before slicing. Garnish with fresh herbs if desired.
8. Serve:
