Ingredients:
- 2 pounds (900g) beef sirloin or flank steak, thinly sliced
- 1/4 cup soy sauce
- 1 cup beef broth
- 1 tablespoon tomato paste
- 1 tablespoon Worcestershire sauce
- 1 tablespoon cornstarch
- 1/2 teaspoon black pepper, freshly ground
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon ground ginger
- 2 tablespoons vegetable oil
- 1 large onion, thinly sliced
- 2 bell peppers (any color), thinly sliced
- 1 cup cherry tomatoes, halved
- Cooked rice or noodles for serving
Instructions:
- Slice and Season Beef (Medium Intensity):
- Slice the beef thinly against the grain. In a bowl, combine soy sauce, beef broth, tomato paste, Worcestershire sauce, cornstarch, black pepper, garlic powder, onion powder, and ground ginger. Mix well.
- Place the sliced beef in the crockpot and pour the sauce mixture over it. Stir to coat the beef evenly.
- Brown Onions and Peppers (Medium-High Intensity):
- In a skillet over medium-high heat, heat vegetable oil. Add sliced onions and peppers. Sauté until they start to soften and get a slight char, about 3-4 minutes.
- Transfer to Crockpot (Low Intensity):
- Transfer the sautéed onions and peppers to the crockpot, spreading them evenly over the beef.
- Cook in Crockpot (Low Intensity):
- Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours. The beef should be tender, and the flavors well-developed.
- Add Cherry Tomatoes (Low Intensity):
- About 30 minutes before serving, add halved cherry tomatoes to the crockpot. This adds a burst of freshness to the dish.
- Check for Seasoning (Low Intensity):
- Taste the pepper steak and adjust the seasoning if needed. Add more soy sauce, salt, or pepper according to your preference.
- Serve (Low Intensity):
- Serve the crockpot pepper steak over cooked rice or noodles.
