Ingredients:
- 6 large poblano peppers
- 1 lb (450g) ground beef or turkey
- 1 large onion, finely chopped

- 4 large eggs
- 1 cup milk
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- Fresh cilantro, chopped, for garnish (optional)
Instructions:
1. Roast the Poblano Peppers:
- Preheat the broiler in your oven. Place the poblano peppers on a baking sheet and broil, turning occasionally, until the skins are charred and blistered. Place the roasted peppers in a bowl, cover with plastic wrap, and let them steam for 10 minutes. Peel off the skins, remove the seeds, and slice the peppers into strips.
2. Cook the Ground Meat:
- In a large skillet over medium heat, cook the ground beef or turkey until browned. Add chopped onions and garlic and cook until the onions are softened.
3. Season and Add Tomatoes:
- Stir in the diced tomatoes, ground cumin, chili powder, dried oregano, salt, and black pepper. Cook for an additional 5 minutes until the flavors meld.
4. Assemble the Casserole:
- In a greased 9×13 inch baking dish, layer half of the poblano pepper strips. Spoon the meat mixture evenly over the peppers. Top with 1 cup of shredded cheese. Repeat the layers, finishing with a layer of cheese on top.
5. Prepare the Batter:
- In a bowl, whisk together eggs, milk, flour, and baking powder until smooth.
6. Pour the Batter:
- Pour the egg batter evenly over the layered ingredients in the baking dish.
7. Bake:
- Bake the casserole in a preheated oven at 350°F (175°C) for 30-40 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
8. Garnish and Serve:
- Let the casserole rest for a few minutes before slicing. Garnish with chopped fresh cilantro if desired.
