Ingredients:
- 4 large russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder

- 4 slices cooked bacon, crumbled

Instructions:
1. Preheat the Air Fryer:
- Preheat your air fryer to 400°F (200°C) for about 5 minutes.
2. Prepare the Potatoes:
- Scrub the potatoes clean and pat them dry. Pierce each potato with a fork a few times.
3. Air Fry the Potatoes:
- Lightly rub the potatoes with olive oil and place them in the preheated air fryer basket.
- Air fry at 400°F (200°C) for 40-45 minutes or until the potatoes are tender and the skin is crispy.
4. Cool and Cut:
- Allow the potatoes to cool for a few minutes until they are easy to handle. Cut each potato in half lengthwise.
5. Scoop Out the Flesh:
- Use a spoon to carefully scoop out the flesh, leaving about 1/4 inch of potato attached to the skin. Save the scooped-out potato for another use.
6. Season and Air Fry Again:
- In a bowl, mix together olive oil, garlic powder, onion powder, paprika, salt, and pepper. Brush this mixture over the inside and outside of the potato skins.
- Place the seasoned potato skins back into the air fryer basket and air fry at 400°F (200°C) for an additional 10 minutes or until they are golden brown and crispy.
7. Add Toppings:
- Remove the potato skins from the air fryer and sprinkle shredded cheddar cheese over each skin. Return them to the air fryer for 2-3 minutes or until the cheese is melted and bubbly.
8. Garnish and Serve:
- Sprinkle crumbled bacon over the cheesy potato skins. Garnish with sour cream and chopped green onions if desired.
9. Enjoy:
- Serve the air fryer potato skins hot as a delicious appetizer or snack.
