Cooking Time: 10-12 minutes
Yields: 12 rock cakes
Ingredients:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1 cup mixed dried fruits (raisins, currants, sultanas)
- 1 large egg
- 1/2 cup milk
- 1 teaspoon vanilla extract
- Zest of one lemon (optional)
- Cooking spray
Instructions:
- Preheat the Air Fryer (Low Intensity):
- Preheat your air fryer to 350°F (180°C) for about 5 minutes.
- Prepare the Dough (Medium Intensity):
- In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.
- Add the cold, cubed butter to the dry ingredients. Use your fingertips to rub the butter into the flour mixture until it resembles breadcrumbs.
- Add Fruits and Wet Ingredients (Medium Intensity):
- Stir in the mixed dried fruits.
- In a separate bowl, whisk together the egg, milk, vanilla extract, and lemon zest (if using).
- Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix.
- Form Rock Cakes (Medium Intensity):
- Using a spoon, drop rough, rustic mounds of dough onto the air fryer basket, leaving some space between each rock cake. They don’t need to be perfectly shaped.
- Air Fry (Medium-High Intensity):
- Lightly coat the air fryer basket with cooking spray.
- Air fry the rock cakes at 350°F (180°C) for 10-12 minutes or until they are golden brown and cooked through.
- Cool and Serve (Low Intensity):
- Allow the rock cakes to cool in the air fryer basket for a few minutes before transferring them to a wire rack to cool completely.
- Enjoy Your Air Fryer Rock Cakes! (Low Intensity):
Optional: Dust the cooled rock cakes with powdered sugar before serving.
